Chicken Gizzard Casserole

This was a great success! Kirby and our foster, Odie, licked their bowls clean! The majority of Kirby's meals include brown rice as a grain so barley is a nice change for him.  Easy, healthy, tasty - what more can a pet parent ask for?

Ingredients

  • 1 1/2 lbs chicken gizzards, boiled and chopped
  • 2 cups chopped spinach, frozen or fresh 
  • 1 - 15 oz can pumpkin puree (not pie filling)
  • 1 cup dried cranberries
  • 1 Tbsp safflower oil
  • 3 cups barley

Preparation Instructions:

1. Cook barley following directions on box.  Kirby doesn't like the barley chewy so I always overcook it until it has mushy texture. I then rinse it under warm water to remove the excess starch. Drain and place in large bowl.

2. While the barley is cooking boil the gizzards. Rinse and chop them into small pieces depending on your dog's size.  Cook the spinach in water for about six minutes.  Try not to overcook so you don't lose those nutrients.

3. Place the dried cranberries and safflower oil in your food processor and finely chop. (The oil is good for the skin and will keep the cranberries from sticking together).

4. Now just add all the ingredients into the bowl with the barley.

5. Thoroughly mix.  

This made 16 servings which can be frozen - be sure to label with the date since barley can be frozen for up to a month.  Thaw and warm in the microwave for 20 seconds before feeding.
