Pumpkin Please

Pumpkin is considered one of the top foods for both humans and dogs for good reason. Its packed withvitamin A, potassium, and iron. In the fall I make treats and pup cakes with pumpkin for Kirby and any fosters we may have. I think every dog should get a little pumpkin in the summer months too so I got busy in my kitchen to whip up a pumpkin dessert Kirby would approve. This can be served as a side dish, mixed with kibble, or frozen for those really hot dawg days of summer.

Pumpkin is usually hard to find outside the fall months so I stock up cans of this power food while it's available. Be sure to check the expiration dates. The cans I have expire in 2013 and 2014. If pumpkin just can't be found consider substituting with sweet potatoes or squash. To use fresh veggies all you need to do is cook and purée them first.

Ingredients

  • 1 - 15 oz can pumpkin puree*
  • 1 - 13.5 oz can coconut milk
  • 2 tsp cinnamon
  • 2 tsp ground ginger
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup**
  • 1/2 cup grated unsweetened coconut (optional)

Preparation Instructions:

1. Pour coconut milk into medium size pot.

2. Add cinnamon, ginger, and vanilla.

3. Whisk to fully blend. 

4. Whisk in the pumpkin. Continue to stir while cooking over low heat until warmed which will melt any fat in the coconut milk and meld all the flavors.

5. Add maple syrup a tablespoon at a time until you have the desired sweetness. Kirby, my chief taste tester, was quite happy at two tablespoons.

6. Once heated through pour into a bowl and set in the refrigerator to cool.

7. If you have some grated coconut on hand, which I do, then mix in about 1/2 cup.

Your dog is gonna love this treat and your gonna love how good it is for him!

*Dont use pumpkin pie filling which is loaded with ingredients your dog should not eat.

** you can use honey or agave nectar if you prefer.
