Holy Mackeral

I am a Christian who believes this little dog is a gift from God. Therefore, I knew I needed to concoct a few fish treats for the Kirbster in celebration of this coming Easter.  

The Fish is an important symbol serving as the catalyst for the disciples to recognize the resurrected Jesus beside the shore. It also was a symbol for early Christians because the Greek word -- "fish" -- forms an acrostic consisting of the first letters of the phrase "Jesus Christ, the Son of God." In essence the fish was the means by which both Jesus and early Christians were recognized and has become a long-standing favorite rooted deep in history and tradition. The Jesus Fish, or Ichthus, has become a proud symbol of faith and belief.

John 21: Afterward Jesus appeared again to his disciples by the Sea of Galilee. It happened this way: Simon Peter, Thomas, Nathanael from Cana in Galilee, the sons of Zebedee, and two other disciples were together. "I'm going out to fish," Simon Peter told them, and they said, "We'll go with you." So they went out and got into the boat, but that night they caught nothing. Early in the morning, Jesus stood on the shore, but the disciples did not realize that it was Jesus. He called out to them, "have you any fish?" "No", they answered. He said, "Throw your net on the right side of the boat and you will find some."  When they did, they were unable to haul the net in because of the large number of fish. 

Ingredients:

  • 1 (15 oz.) can mackerel
  • 1 ½ cups instant mashed potatoes
  • 2 eggs, beaten
  • 1 tablespoon lemon juice
  • 2 tablespoon chopped parsley
  • ¼ teaspoon sea salt

Preparation Instructions:

1.  Drain the mackerel, saving the juice.  

2.  Break apart and carefully remove the spine bones. 

3.  In a medium bowl thoroughly mix together all of the ingredients.  Add just enough of the mackeral juice to help the ingredients stick together.  (Fish oils are very good for the skin but I also added a Tablespoon of flax meal since Kirby has such dry skin - actually I add flax meal to almost everything he eats)  

4.  Shape into small balls or patties if preferred. The dryness causes them to be a little hard to form but they will bake to a perfect crunchy on the outside, soft on the inside morsel.  

5.  Arrange on a parchment lined or greased cookie sheet. 

6.  Bake at 350 degrees for 20 minutes.

7.  Let cool and serve.

These will keep in the refrigerator up to a week or can be frozen for at least a month. 

Kirby loved these so much he was very vocal about wanting more until I finally had to say no more.  I swear there is a cat in that dogger!
