Muttloaf

I love meatloaf and mashed potatoes with gravy.  Talk about comfort food for the soul!  I enjoy feeding Kirby different options so I thought why not a meatloaf of his own, hence muttloaf was born.

Ingredients 

  • 1 lb. ground hamburg
  • 2 eggs
  • 2 cups instant oats
  • 2 tsp. parsley
  • 2 - 3.5 oz baby food carrots
  • 1/4 cup flaxseed meal
  • 1 cup diced sun dried tomatoes

Preparation Instructions

1.  Pour all ingredients into a large bowl and, using your hands, mix thoroughly.  
2.  Form into individual small loaves and place on greased rack of broiler pan.
3.  Bake at 350 degrees for 40 to 50 minutes or until done.  
4.  Let cool and serve.
 

Freeze leftover loaves in ziplock freezer bags.  For a quick and easy meal just pop in the microwave.
There really is no wrong way to make meatloaf.  All you need is a pound of ground hamburg and a little imagination to come up with your own recipe.  I used instant oats because I wanted to be sure they cooked completely.  Parsley is so good for bad breath.  Kirby doesn't like to eat raw carrots so I try to implement them into his meals or treats but you could use any veggie.  Using baby food gives me the liquid I need to blend the ingredients but you can chop some fresh veggies and add tomato paste or water.  Flaxseed is really good for Kirby's skin and coat but can be replaced with a few tablespoons of olive oil for the same benefits.  I used sun dried tomatoes for a chewy texture but you can use fresh or canned diced tomatoes.
