Frosty Freezy Ice Cream - Just 2 Ingredients

Picture this. You get a small bowl of ice cream and snuggle in front of the tv for some "me" time.  You check your recorded listings and pick one you've been wanting to see when you finally have the time.  The show begins, you take a yummy bite savoring the cold sweet flavor, and it's then you notice that furry face staring at you with those sad puppy eyes and just the tiniest bit of tongue hanging out for that pawfect drooling look. You hand him a dry dog friendly treat while you guiltily ignore him to eat the rest of your ice cream.

Now picture this.  You get a small bowl of ice cream and snuggle in front of the tv for some "me" time.  You check your recorded listings and pick one you've been wanting to see when you finally have the time.  The show begins, you take a yummy bite savoring the cold sweet flavor, as you glance across the room to see your dog happily wagging his tail with his muzzle buried in a bowl of dog friendly ice cream.

Prep Time: 15 Minutes      Freeze Time:  4 hours     Yields: 1 Quart (8 1/2 cup servings) 

Ingredients: 

  • 2 cans full fat coconut milk (not Lite)
  • 1 cup frozen fruit, chopped

Preparation Instructions: 

1.  Chill the cans of coconut milk overnight which will allow the milk to separate.  like Thai brand coconut milk best.

2.  Remove the chilled cans and turn them upside down.  Carefully open the cans and pour off the watery part of the coconut milk leaving only the milk fat. Scrape out the milk fat from the bottom of the cans into a chilled food processor mixing bowl or high speed blender and blend until thick and creamy.

3. Mix in the chopped fruit. I used blueberries. You can use fresh fruit as long as you chill it first.

4. Pour into a freezer safe container, cover and freeze for several hours.

This "ice cream" will eventually completely freeze into a solid block of ice so you want to put it in a shallow, somewhat long container so you can easily cut it up. Then you’ll want to blend it again which will turn it into a shaved ice consistency. For a creamier texture, place it in a bowl, let it melt a little, and then stir.

Even easier would be to freeze it in silicone molds or plastic cups for individual servings.
