Christmas Carob Bark
/The holiday season is fast approaching which means it's almost time to start baking all those scrumptious Christmas cookies and candies. Well now you can make a delicious candy for your dogs! This recipe is fast and easy, and best of all, no baking which means the children can safely make these.
The coconut and carob provide plenty of sweetness so there's no need for any sugars to be added. Adding the peppermint gives them more of a festive taste plus is a great breath freshener but you can leave it out. Instead of almonds you can add peanuts. These are so good I like them!

Ingredients:
- 3/4 cup coconut oil
- 1/4 cup carob powder
- 1 teaspoon peppermint extract
- 1 snack pack (18) almonds, chopped
Instructions:
- Fill a large bowl half way with hot water and then place a medium bowl in the hot water.
- Add the coconut oil, and once it melts, stir in the carob powder and peppermint until thoroughly blended. Remove from the hot water and let it sit to thicken up and then stir again.
- Mix in the chopped almonds.
- Spread out mixture on a baking sheet lined with wax paper.
- Place in the freezer until hardened.
- Break into pieces.
Store in a zip lock bag. They will keep in the refrigerator a few weeks and in the freezer for several months.
* You could let the coconut almost melt and then stir in the other ingredients. It will take more work to really incorporate the carob powder but the mixture will be thicker so the carob won't settle as much on the bottom. Either way is delicious!
