Turkey Burgers


Turkey Burgers

Kirby loves a healthy burger! These are made with turkey but any ground meat would work. 

Ingredients 

  • 1 lb ground turkey
  • 12 oz bag Broccoli Slaw (broccoli, carrots, red cabbage) or 4 cups of fave veggies
  • 2 Roma tomatoes or 1/2 cup tomato juice
  • 1/2 cup plain bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, slightly beaten

Preparation Instructions

1.  Purée or finely dice your veggies.

2.  In a large bowl use your hands to thoroughly mix together all the ingredients. These can be formed into patties and cooked on the stove. If your grilling then throw some on with your hamburgers (these are soft so cook on aluminum foil so they don't fall through) and freeze the remaining patties for next time.

3.  To make ahead bake in non-stick sprayed muffin tins. Simply fill each tin with the meat mixture. 

4.  Bake at 400 degrees for 20 to 25 minutes or until internal temperature reads 170 degrees.

5.  Let cool and serve.

I freeze these in ziplock bags. Take out what you will need that morning and let thaw in the refrigerator. When time for supper just pop in the microwave for 20 seconds to warm. Quick, tasty and healthy!
