Arroz Con Pollo

Arroz Con Pollo is spanish for "rice with chicken".  One of the few sayings I actually remember from spanish class.  The classic recipe calls for white rice, Roma tomatoes, and several spices including onions and garlic.  This is my standard super easy "Kirby" version.  

It's a great way to use left over chicken - baked, grilled, or roasted. Just make sure there weren't a lot of seasonings used.  White rice is perfectly ok but brown rice is much healthier.  Sometimes I do add finely diced roma tomatoes fresh from my garden but most of the time I just puree leftover veggies.  I always keep baby food (fruits, veggies, and meats) in my pantry for when I need to add some flavorful moisture to one of Kirby's meals.

Ingredients

  • 2 cups cooked chicken
  • 2 cups cooked brown rice
  • 2 - 3.5 oz Baby Food sweet potatoes
  • coarsely chopped fresh parsley

Preparation Instructions

1.  Mix shredded chicken with the cooled brown rice and baby food.  

2.  Add as little or as much parsley as you want. 

There are so many veggies to choose from - just make sure they are dog safe.  Use baby food which is already pureed or Actually the varieties of meat and veggies are almost endless.  This is a great meal to throw together when you are short on time not to mention a great way to use up your leftovers.
