Banana Cookies

Just enough sweetness to satisfy that sweet tooth and a whole lotta goodness!  Bananas are very low in saturated fat, cholesterol and sodium, a good source of dietary fiber, vitamin C, potassium and manganese, and a very good source of vitamin B6.

Ingredients

  • 1 1/2 cups oat flour
  • 2 cups brown rice flour
  • 1 egg
  • 1/4 cup flaxmeal
  • 1/2 cup non-fat dry milk
  • 4 bananas, mashed
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt, finely ground

Preparation Instructions

1.  Thoroughly mix together all ingredients in large bowl.  

2.  This dough will be sticky so place in refrigerator for about 15 to 20 minutes to chill.  

3.  Roll out dough to 1/4 inch thickness and cut with your favorite cookie cutter.

4.  Place on parchment lined cookie sheets and bake at 300 degrees for 20 minutes.

5.  Turn off oven and leave for about an hour.

Store in the refrigerator in an air tight container for up to two weeks.
