Green Eggs & Ham

Green Eggs & Ham

"Do you like green eggs and ham?
I do not like them, Sam-I-am.
I do not like green eggs and ham."

Dr. Suess clearly did not care for green eggs and ham, but if he had a dog, that dog would gobble  up these green eggs & ham treats and beg for more! Kirby doesn't get to eat pork (bacon excluded) since it's such a fatty protein so he really enjoys this taste changer.

Also St. Patrick's Day will soon be here so I wanted to come up with a treat that was yummy in a glorious shade of green. I like to use fresh spinach but to get a deeper green color once baked - use frozen spinach. Actually I came up with two recipes since I had a lot of spinach and ham in the fridge. Sadly, the first treat was a bust per Kirby so it won't be mentioned but this one turned out really good.  Tasty enough for the humans too!

Green Eggs & Ham

An tasty dog treat to celebrate Dr. Suess or St. Paddy Day

Yields: 76 treats
Prep Time: 15 minutes
Cook Time: 30 minutes

Nutrition facts: 20 calories, 10 from fat

Ingredients

  • 1-1/2 cups spinach, finely chopped
  • 1-1/2 cups (8 oz) cooked ham, finely chopped
  • 2 cups unseasoned bread crumbs
  • 6 eggs, beaten
  • 1/4 cup grated parmesan cheese
  • 1/3 cup shredded cheddar cheese
  • 1/2 cup extra light olive oil
  • 1/2 teaspoon sea salt

Instructions:

  1. Using a food processor finely chop the spinach and ham. You can use frozen spinach but it just doesnt have the same abundance of nutrients found in fresh spinach. I purchased a 10 oz bag of fresh baby spinach leaves which yielded 2 cups finely chopped spinach.
  2. Thoroughly mix all ingredients in a large bowl.
  3. Scoop spoonfuls (I used a small cookie dough scooper) and place on a baking sheet. They can be placed close together since they won’t rise or spread while baking.
  4. Bake at 350 degrees for 30 minutes or until lightly browned on bottom edges.

They can be stored in the refrigerator for about a week or in the freezer for up to 4 months.

Kirby tends to have dry itchy skin so I add lots of oils to his food and treats, mainly salmon oil and olive oil.  "Extra light" olive oil is lighter in flavor letting the other flavors become more prominent. You can reduce the amount of olive oil if you worry about fats however do keep in mind the many healthy benefits it has.

If you want them to have a deeper green color when baked - use frozen spinach.

You can change the ingredient ratios - too much spinach for your taste? Use just a cup and add an extra 1/2 cup stuffing.   Either way, feel free to have a few yourself.  They are delicious made with human grade ingredients!
